Hot pockets

Yesterday I tried my hand at hot pockets. They were very good but next time I will add more things inside. First you need to start off with a good bread recipe.

White Bread:

2 tsp Yeast

1 cup warm water

2 tbl Butter

1 cup milk

2 tbl sugar

1 tbl salt

6 cups flour

Throw all of this into a bread machine and set it on your dough setting. If you dont have a bread machine but do have a kitchen aid. First activate your yeast by placing the yeast, water and sugar in a bowl for 15 minutes until it becomes frothy and slowly add the rest of the ingredients starting with the wet and ending with the dry. You will need to mix it for about 10 minutes for the amount of time that it needs to be kneaded..or you can do it will good old fashion muscle. πŸ™‚

Once your dough is nice and smooth. Start tearing medium sized balls off. Flatten these out like you would a 6 inch pizza or personal pizza. And add what you would like on the inside. I chose cheddar and Honey ham. I would add more than this next time though as there was more dough than goodies.


When everything that you want is in there push the inside down and pull up the sides in order to form the ball around the filling, then do a little twist so that when you flip it over it wont run out when it is being cooked.


Place this on a pan lined with foil twist side down. I then melted butter and added about a teaspoon and a half of garlic salt and brushed the tops of all of the hot pockets. Bake at 350 for 25 to 30 minutes until golden brown on top and serve immediately.


We served them with mustard because they are like little sandwiches. As always enjoy.


Best Mashed Potatoes

I made the best mashed potatoes tonight! Let me tell you how I did it.

6 medium to large potatoes (peeled and chopped into cubes)

2 cups milk

2 heaping tablespoons Butter

Put all three into a large pot and boil until the potatoes are soft enough to mash. When are throw them into a kitchen aid mixer and mix until all the lumps are out. You will need to add more butter and i also add heavy whipping cream. Probably up to half a cup. When it looks nice and smooth add 1 Tablespoon dry ranch dressing seasoning mix. Stir it in really good so that everything is incorporated and your done. These were so yummy! The girls called it a keeper. In our house that means that we eat it from now on πŸ™‚


Buttermilk pie

Years of growing up and seeing this pie at the Thanksgiving dinner table taught me one thing. Eat quickly and be the first to the dessert table! I love this pie however, all I ever got was the store bought kind and then for some reason it disappeared from the shelves. I can’t buy one I can’t find one and for the longest time I could not find a recipe! Well I ran across the recipe the other day and quickly wrote down Buttermilk on my grocery list…it was the only thing I did not have to make this pie. Most of the items are in your pantry and it took less than ten minutes to whip it up, throw it into a pie crust and be ready for the oven….my oven took longer to heat up! After and hour and fifteen minutes in the oven and then another 2 hours for cooling and setting I had my first bite of this pie that I have not had in at least 15 years! OHHHH it was melt in your mouth good and what could be better than something easy to make and wonderful when it hits your taste buds! I have included the link to the recipe because I think the woman who posted this recipe needs props to how wonderful this pie is and she is passing it down from her Granny. πŸ™‚ I love old recipes that are passed down and she is nice enough to share it with the internet. Chicken Tortilla soup

?????????????????????????????????????????????????????????????????????????????????????????Well apparently this Winter will be all about the soups..and we aren’t even into Winter yet. Today I am making Chicken Tortilla soup. It is a little spicy but not too hot, and hearty.


1 Whole chicken

15 oz can of sweet corn ( I am using fresh corn from the garden)

1 can of Rotel (i use original)

1 cup of Jasmine rice

2 tsp pepper

3 tsp Salt or to taste

1/2 tsp chili powder

10 cups chicken stalk

Tortilla chips

Mozzarella shredded cheese

I start with a large pot with enough water to cover your chicken. Boil your chicken until it is cooked through. Turn off your burner and remove the chicken from the broth, place it in a bowel and walk away for about an hour. Once your chicken is cooled down you can begin to pick all of its meat off the bones.

Transfer your broth into a bowel and wash your pot. Put the broth back into the clean pot along with the chicken you have removed from the bone. It should be in pieces that are bite size. Add Corn, seasonings, and Rotel to your mix. Let that boil for a good 30 to 40 minutes and then add your cup of rice. Cook until the riceΒ  is done.

Serve immediately into bowls and sprinkle the cheese on top. If you want you can also place some chips on top of the soup.

Cupcake and cupcake cakes

Good morning Liberty hill friends,

I know most of the time I am on here telling you how to do something great…this time not so much. It is Halloween time again and I know a lot of the teachers like to do small things with their classes on that day. I am making a ghost cupcake cake and a pumpkin cupcake cake and can also make a few other things as well. If anyone want’s to take a treat for their class I can make them. It’s 10 dollars per cake/ cupcake cakes and all I need to know is how many students are in the class and what you want me to make. Also I do not use boxed cake or icing everything is homemade.Β  I can also do other things just ask or tell me what you are thinking and we can come up with something. Cough Syrup Tea


Well we are once upon a season where everyone is coughing! So far this season Steve has been sick for going on a week and a half now. Cameron has had walking Pneumonia and Hayleigh has had a random fever with no other happenings. So what do I do? I start pumping people with vitamin C and making sure I do everything that I can in order to avoid illness. While reading up on things today I found a recipe. This recipe is basically a Lemon Ginger Honey cough syrup that you put into a cup of boiling water. This makes a tea with natural ingredients that should help you fight off coughs and illness. So slice a lemon thinly, a ginger root thinly and pour honey on top of it. This can go into a mason jar. Place the lid on it and leave it alone for 24 hours. Once that time is over put 1 tablespoon of the syrup into boiling water and drink. You can also drink this every night for allergies. This is not a medicine it is using natural ingredients and vitamins to improve your health. So I set aside 5 minutes and made this today. I can’t wait to see if this helps Steve out more than anyone. I have never seen him cough so hard and I am ready for him to be healthy now :). Finger’s crossed and as always Enjoy!


Ok I recently bought a juicer. I have a daughter who catches EVERYTHING! Two weeks into school she had Walking Pneumonia. Something needed to be done, so here is what I decided. Organic fruits (from the store because our trees aren’t producing yet) and of course all the veggies are from the garden. The last thing we need is to pump a while bunch of crap into the girls when I am trying to fix a problem like health to begin with. So here we go the first couple of days I was throwing everything into this juicer. The amazing thing was no matter what I threw in it the girls were drinking it and loving it. And then I got sick….it’s the normal allergy season at our house and this was just one of those days…but for me it usually lasts about a week or two. My tonsils were swollen, I couldn’t breath I felt horrible. So here we were juicing and I was loving the way it tasted….two days later I felt like a human being again. I continued to blow my nose like crazy but I felt good and I am blaming it all on the juicing. The only bad thing about it is how much you have to scrub to get the juicer clean! Oh well. The health benefits out-way that one. So here’s what I juiced and loved.
