Mozzarella, Ricotta, and farmers cheese (Lactose free)

Attention all Lactose intolerant people!!! I have tried nearly all of the Lactose free cheese and they are…ummm ok but lets face it if you are someone who loves cheese and you are lactose intolerant the only thing you want in a nice large slice of pizza orΒ  lasagna…why because it is the thing your body tells you that you cant have. So the first thing you do is try to work around the fact that you can’t eat these things. You take pills and you buy the tofu stuff and you just deal with it. Well I have something to share. I have talked about the lactase drops on here before but I will share again. What I do is buy a regular gallon of milk and then put these drops into the milk. Once the milk has set for 24 hours you can drink it without a problem.

I recently went to a local dairy and bought raw milk (straight from the cow). This also makes sure that there are no preservatives in the milk and makes sure that your milk is as fresh as you can get it. I bought 2 gallons in order to make cheese. I am starting with easy ones and plan to get slowly to the harder ones. My first one that I tried was farmhouse cheese. It was so easy you would not believe it. I poured half a gallon of milk in a large stainless steal pot and brought it to 180 degrees then poured a little over 1/3 cup vinegar in the pot. You then turn the heat off and wait 15 minutes once that is done you strain all of the whey off of the cheese and press it together with your hands or you can use spoons. Try to press as much juice off of it as you can. I poured mine through a small mesh strainer and it was lined with cheese cloth. I then placed it in a plastic container. I was so excited about my first homemade cheese. I made spaghetti and then chopped up small pieces of this cheese and threw it into the sauce. This cheese will not melt and holds it shape. This is the website that I got the recipe from. Let me just say it was amazing to be able to eat cheese in a meal and not have to worry about it making us sick!

Moving on….

Today I made Mozzarella. I was really worried about this one because I have read if your milk isn’t fresh enough it wont turn out at all. I would hate to waste my time making something that doesn’t work but I figured it was worth a try. So after my drops had been in my milk for 24 hours I tried it. One full gallon of milk poured into my large stainless steal pot and add 1tsp citric acid. I turned my heat to medium low and waited until the heat reached 90 degrees.Β  While that is heating up you dissolve 1/4 rennent tablet into 1/4 cup water and once your milk reaches 90 degrees your pour your mixture into the pot over a slotted spoon. Turn the heat off immediately and stir in mixture for 30 seconds. Wait 8-10 minutes then go cut your curd into a grid. Then stir slowly for 1 minute. Take your slotted spoon and place in a microwave safe bowl…I used a large measuring cup. try to get as much of just the curd as you can and pour off any excess that ends up in your bowl. Once you have most of the whey out of your cheese place it in the microwave for 1 minute. Pull it out stir it and pour excess whey off it again and place in the microwave for 40 seconds. Put it back in the microwave for another 40 seconds and pour excess off again. At this point your curds should be sticking together and becoming sticky. At this point you will need to salt your cheese with 2 tsp cheese salt. You will kneed the salt into the cheese and then stick it back into the microwave for another 40 seconds. When it comes out it will be hot but at this point you will need to start stretching it and kneading it so that it will become shiny and stretchy. Once it is shiny and stretchy place it in a ice water bath for five minutes. This is amazing Mozzarella, it’s taste is wonderful and the fact that it is lactose free is amazing. I am making Lasagna Saturday for the first time in over a year.


Finally last but not least all of the drained off whey from your Mozzarella that you just made can also make Ricotta. But it has to be made within 3 hours of the Mozzarella or it cools down to much and it wont work. Take the whey and place it back into the stainless steal pot then add 1 quart milk to the mixture and heat it to 200 degrees. After it hits 200 degrees turn off the heat and add 1/4 cup apple cider vinegar. Let it sit for five minutes. Then in a cheese cloth lined strainer pour the liquid through. You can let it drain in the sink or use a pot to catch the whey. I use the leftover whey for bread and pancakes…or anything that calls for milk or water in the ingredients. The ricotta will have to drain for a while mine took 45 minutes. After it was done I placed it into a container for my Lasagna that I am making Saturday.


There is nothing more this week that I am more excited over than tasting my lasagna…that wont make us sick. Yay to being able to make my own cheese for recipes that is Lactose free! As always enjoy…I hope this is helpful to someone.


Buttermilk pie

Years of growing up and seeing this pie at the Thanksgiving dinner table taught me one thing. Eat quickly and be the first to the dessert table! I love this pie however, all I ever got was the store bought kind and then for some reason it disappeared from the shelves. I can’t buy one I can’t find one and for the longest time I could not find a recipe! Well I ran across the recipe the other day and quickly wrote down Buttermilk on my grocery list…it was the only thing I did not have to make this pie. Most of the items are in your pantry and it took less than ten minutes to whip it up, throw it into a pie crust and be ready for the oven….my oven took longer to heat up! After and hour and fifteen minutes in the oven and then another 2 hours for cooling and setting I had my first bite of this pie that I have not had in at least 15 years! OHHHH it was melt in your mouth good and what could be better than something easy to make and wonderful when it hits your taste buds! I have included the link to the recipe because I think the woman who posted this recipe needs props to how wonderful this pie is and she is passing it down from her Granny. πŸ™‚ I love old recipes that are passed down and she is nice enough to share it with the internet. ICE CREAM! For a lactose intollerant family. :)

Ok for starters who doesn’t love homemade ice cream πŸ™‚ or just ice cream in general. The problem for us First Lactose free Ice cream is expensive for so little. Second It is not lactose free there is still 1 percent lactose in it and sometimes that little bit will make a difference. After trying hard to make ice cream and failing, we found a recipe that works. Now i say fail because when it froze it was hard as a rock or just wasn’t what we were going for. My mom and I put our heads together and I think she was the one who finally found the perfect recipe. Now I know I keep talking about the lactase drops on Amazon but they work and they help with anything liquid so far. So I buy my gallon of milk and put these in it and also Heavy whipping cream with drops in it. 24 hours later I am ready to make my ice cream. I also have a cheap (35.00) ice cream maker also ordered from Amazon (i swear they aren’t paying me).

2 cups milk (with drops)

2 cups heavy whipping cream (with drops)

1/2 cup sweet cream coffee creamer

a pinch of salt

1 cup sugar

1 tsp vanilla (optional)

Mix these together until sugar is melted and place in your fridge for 30 min to get it as cold as possible before making your ice cream.

After 30 min pour into your ice cream maker and turn it on for 32 to 34 minutes. Place in a freezer safe container and enjoy πŸ™‚ So good so easy and lactose free.

Little things I learned as adult I feel I should have learned earlier…

This is another blog about saving money. There are so many things we do throughout our day that we think we have to do and when you find out you don’t it is a huge surprise! So here are little things that I have picked up on in the last 8 years after having kids. I wish these things would have hit me earlier… Here goes.

1. Do you hate leftovers? Every week trying to eat what you have left over from those amazing dinners? First DUH moment right here…”have you ever tried freezing them” someone smarter than me said once. As I stood there with a look of shock and ahhhh it was obvious i didn’t realize you could freeze these things instead of trying to eat them night after night and hating each meal more. So what do we do now? That’s the big question right. Now if there is enough of something for another entire meal into the freezer it goes. Lasagna is a good one for this, there is always so much left over and I swear it is always half of what I made. So now I use two 9×9 instead of a 9×13 and one goes into the freezer after I cook it and let it cool. Other things are not so easy butΒ  if there is enough for another meal put it in the freezer….it wont sit in your fridge and go bad. You just have to eat it before freezer burn catches it. πŸ™‚

2. How did I just realize that mayonnaise was so easy to make. It took me less that 5 minutes to make it and I spend at least 4 dollars a month on one jar. Whats worse is that all of the ingredients are just sitting in my pantry just begging to be turned into SOMETHING. Was there a class on this in High school and I missed it that day? I mean where was I during the day they taught people some things a way cheaper to make and are usually better?

3. You can make your own cleaners. Again here I go just throwing money at cleaners when I could make multiple cleaners and soaps with things that are already in my house or way cheap to buy. Is it just because Mr. Clean was so Awesome that we just decided to pay for instead of making it? Guess what Vinegar and oranges do an excellent job. And that horrible stainless steel cleaner that is so greasy….yep you can make one yourself that isn’t greasy. Oh what a sad day this was when I realized so many things at once.

4. I am a fan of this one really. Apps are helpful. I recently learned about checkout 51. This is an app that you download to your phone and it will shown you extra coupons that you can redeem on your phone. You just buy your regular groceries and if any of the items are on your receipt, you scan it with the app and they credit the coupon to your account. When you reach 20 dollars they send you a check! How can you go wrong. They usually have things like milk, eggs, bread, cereal and many other things. It updates every week or so giving you different options.

5. Consignment stores!! I have an excellent consignment store right around the corner from my house. The clothes there are amazing. I can go in and find 8 slim for my daughter for 5 dollars! I can’t even get them at that price at Wal-Mart or Goodwill. I also sell clothes from my girls there and just got my first check from them for 23.00. That money does not go towards groceries or spend money that money goes in the girls savings accounts. Look at that every little bit goes a long way.

I am sure that there are going to be many other DUH moments that I experience through life but it is a little upsetting when you realize you have been wasting money. Tales from a lactose free family…making butter now :)

Ok so first of all let me start by saying we are lactose intolerant and love butter, cheese and ice cream. Now we try to make our own things so that we can eat it and enjoy it without getting sick. About a year ago my mom found Lactase drops on Amazon. They are added to milk products and after 24 hours the lactose is turned into sugar so that it will not bother you if you are lactose intolerant. Β I add these to a gallon of milk and 24 hours later we can drink regular milk. This saves us half the money when we do it this way instead of buying lactaid milk. So on to the butter. I bought heavy whipping cream, placed it my kitchen aid mixer, added a tsp of salt, turned it on high and covered it to reduce the mess.


This took about 25 minutes and I checked it every 5 minutes to make sure it was looking ok. At this point I didn’t know what I was looking for because it looked like whipped cream…which it was. I kept it going because i had faith that it WOULD work πŸ™‚ I knew that the butter was supposed to separate from the buttermilk. Finally it started separating and I took my large sifter dumped the the butter/buttermilk into it so that it skimmed the milk off of it. I took the butter and placed it into a container and poured the buttermilk into the another one. So for 3.39 I got a large portion of butter and half a quart of buttermilk…not bad if I do say so myself and totally worth my 25 minutes.



Go for it! GIve it a try and the butter tastes amazing πŸ™‚ If I can do it you can too. And it’s lactose free!!! It will also work without the lactase drops.
